I sampled the wine last Friday and the taste was quite good. Clarity isn't quite where I want it, so it's sitting this week. Should go into bottles Friday night.

I had never heard of kombucha so had to google it to find out what it is. Sounds like nasty stuff with good potential to harm you (according to the inter web). Why do you drink it?

Done right it has a great amount of healthy bacteria. More probiotic than yogurt.

This past Saturday was bottling day. I did one more SG check and confirmed the alcohol content at 13.5%
The sample in the test cylinder had good clarity and a nice sparkle.
Then into the ultimate test chamber

It met with approval from Wifey Dearest, so into bottles it went. We had a couple of friends help us collect bottles over the past month. At least one of us has a drinking problem. :lol:

Ended the day with 13 double bottles and 4 singles plus 2 small glasses.
We to be honest we "ended" the day with 13 doubles and 2 1/2 singles in the pantry.

Chemistry update
We took several bottles of the home made Merlot to the beach for family vacation. Wifey Dearest's Mom and Brothers with their wives and kids. The wine met with approval from all and GREATLY diminished our stock on hand.
We ordered another Merlot kit that should be here end of this week or early next week.

Stay tuned, Merlot to follow.
I'm also going to do a small batch, 1 gallon or so of a white for a test run, then a 6 gallon batch of white before Christmas for sharing with the family.
