An Aprilia RSV1000R motor would be a good choice, though it is technically Austrian (Rotax). It's ~140hp, water cooled, and dry sumped.

Seconded on the Aprilia motor, for the reasons given by Greg (plus it's main castings are magnesium, so very light). Also V-twins fire half as many times per minute as 4 cylinder engines, so don't sound as frantic and stressed at typical bike engine revs (which is a Very Good Thing as far as I'm concerned, though some may not agree).

...but if you want something a bit more offbeat, with a more robust clutch than the Ducati and a lot of grunt (by bike standards, anyway), how about the Moto Morini Corsaro 1200?

I'm thinking more towards 4s because of the balance/vibration issue, and that I prefer the 4 cylinder shriek to the 2-cylinder rumble.

That does rather narrow your options if you want something Italian, of course...

Hi, this is something that I've thought a bit about too. The UK locost site has more info on Euro engines simply because they are more common there. There is a middy kit which uses the Aprilia called the SDR Sportscars V-Storm. I believe its available in the USA now too and there are several magazine tests of it.

this video shows a couple of Aprilia-engined ones (see at 2:35 for sound of engine)

Motoguzzi V twins sit across the bike of course unlike most. I believe way back in the mists of time they were originally for little 4 wheel load carriers rather than bikes. Richard Oakes' Blackjack Zero used it mated to a VW transaxle. Again there is a lot of press coverage

(I hope that image link works.)
here's a video in San Diego of one (shame the wind on the mic ruins the engine sound)

and here's a link to pictures of adaptor parts Moto Guzzi to VW on both the gallery and kitset pages

Cheers
