The stat is important for a quick warm up. When the engine is cold, the mixture is rich which is harder on the cylinder walls (more rapid wear).
The primary restriction is the head gasket holes and bypass to prevent hot spots from running hard on a cold/tight/closed stat engine.
If you have excess cooling capacity (under some conditions), the stat maintains the temp so the design clearances are maintained.
