If taking the extra challenge of going the non-NA/NB Miata route, I would also be keeping an eye out for a lightly totaled S2000. I know that there are at least one or two S2000 donor build logs, but off hand I don't recall any using an NC Miata donor...Not that I can think of anything about the NC Miata that would necessarily preclude one from being used. Although one of those challenges might be if not using a significant portion of the stock rear subframe, since the multi-link design that the rear uprights use might be more complicated to reproduce well.

Honda F20C, (S2000) hands down. 247HP, 9000 RPM redline, 6 speed, Honda racing lineage.
Mine will arrive next Wednesday, $5K for engine, trans, harness, ecu, front subframe assy complete with struts, rear subframe complete with differential, axles, everything as removed with struts. Big ass disc brakes all around too.

I don't think the OP ever started. He was active for one month in 2014 and disappeared. The F20C is a great motor especially on stock form. There are better options though depending on how deep your pockets are. Cosworth Duratec motors for example is a better 2.0 NA engine.

So far I'm pretty happy with how well my Alfa-Romeo Spider based build is going.
Custom front A arms mostly due to the narrow body and chassis width.
Custom rear trailing arms too.
But not much else has to be taken from other donors or parts stores.
Looks like radiator, gauges and wheels will all work out fine.
I will build my wire harness from scratch, simple since I do not have F.I., VVT, or any other superfluous modern headaches.

Also planning a mostly single donor Miata based build that will be harder due to the work required to narrow the front and rear cradles, F.I., and other electronic gimmickry.
I will make 1999 my cut-off year for the donor in order to avoid VVT.
I may even convert it to Webers and dispose of a ton of complication.

I know it has been well over 10 years since I started my build but has the price of donors risen that much? I had slightly over 5K in my total build with the donor being only 600 bucks of that. That cost could have been noticeably less if I didn't rebuild everything from the donor (calipers, pads, rotors, engine ECU etc.) Maybe the Locost (low cost) philosophy has been lost along the way? I considered my car at 160HP "high performance".

I think any engine over 125 hp in a 1300 lb car will be an absolute hoot to drive on the road.

That is, unless we are talking about going for a track record somewhere.
