I realize most have windshields these days, but what do you guys wear for head gear while driving? Nothing, hat, glasses, helmet....

Leather cabby hat - $10, prescription auto darkening goggles - $190, and custom formed ear plugs - priceless .

I have a set of vintage green Italian Carabinieri half-shell helmets with face-shields to use.
Not DOT approved but that will not matter for this purpose.

These work great. Keeps the sun and wind off. Keeps the earbuds in. Even rain they work. I have a bunch of different colors. It’s a buff head wrap. Your wife will know. Amazon and eBay have them. The name brand buff are the best but pricey. There are a bunch of knockoffs.

Ball cap to keep the sun out of my eyes when the sunglasses aren't enough. Full windshield and semi-spats on the inside of the front wheels keep most of the buffeting down.

YMMV

Even with a windshield I still wear a helmet. I get enough wind and debris coming around the corner of the windshield, plus if I got hit even lightly from the side there's nothing else to protect my head.

I wear corrective glasses. At speed, my eyes would either dry out or tear up. I know, strange huh? I used a pair of Scorpion Global vision eyewear over my regular glasses. I also used dew rag over my hair (what is left of it). And also some ear plugs. I will tell you that 12 hours on the highway will wear you down no matter what you do. I have been hit squarely in the face with stones more than once . They kicked up off the front wheel, bounced forward off the rear fender, then off the inside of the windshield into my face. Fortunately it had lost a lot of energy by the time it hit me. No helmet for me.
