Now that I've started work on the frame and hope to have a rolling chassis soon, I need to start looking for wheels. I'm trying to get as close to the 60's style series 2 wheel as seen in this google image search.

I'm looking for specifically the style seen in the open credits of The Prisoner. It looks to be similar to a hot rod raylle wheel with a small baby moon cap. A company called Wheel Vintiques carries a very similar wheel which I may just have to settle on. The price isn't bad but I wonder if anyone has any ideas to possible source a "locost" alternative. I did happen to see an older 60-70's model Chevy G10 van that appeared to have the right style, wasn't sure though since it was dark.

Using Mustang II / GM 7.5" 10 bolt so my bolt pattern is 5 x 4.75.

Those always reminded me of an original VW Beetle wheel. I'm not sure what you could do about the ginormous VW bolt pattern though.

How does the center hub cap attach to the wheel?

I'm pretty sure the cap is just pressed in.

Nice 7 in your avatar, even nicer Cherokee

Close without the hub cap are 70s toyota wheels. See Too Busy's 78 celica donor.

The Lotus Mark 6 had the vw wide 5 style wheels.

Early chevy Astrovan came with similar wheels with pie pan center caps but they are 5x5.

Check out these mid 90s s10 wheels. I think the center cap is stainless versus an aftermarket, cheap chrome cap.

Thanks for the ideas, the S10 wheel looks pretty close to what I'm looking for, not to mention the correct bolt pattern as well. I just found some early model S10 wheels that are 14x6 but not sure if I can get caps for them.

Those don't have similar caps, just a small dome cap over the hub.
Also, about the lowest profile tire to be found in 14" is the stock miata size of 185-60-14 at $66. A 225-50-15 is $75 , so you might want to use 15s. I would suggest 205-50-15, but these rims are 15x7.

There are plenty of these on ebay for $20-30 each, but contact the sellers to request a set with the center caps. Worst case, you might have to go to the dealer for the caps.
Size:
15x7, 5 lug, 4-3/4", 6-Spoke
Original Machined Finish w/3 caps to choose from
Fit:
94-97 Chevrolet Blazer S10/Jimmy/S15
94-97 GMC Sonoma
96-97 Isuzu Hombre

I'm using S10 rear and front bits.

Look at pre-1993 (not including 93!) Camaro wheels, which share the same bolt pattern. When you look for "Camaro" there are a ton of choices, and many of them are in the local J-yard or Craigslist.

HOWEVER, the Gen 4 and forward (93 and forward) have a large offset -- like most modern wheels the mounting face is almost flush with the outside of the rim instead of in the middle. For the S10 front spindles, this runs afoul of the steering arms, and for the rear, this runs afoul of the ebrake cable (hell, that stupid cable hits damned near everything!) and perhaps even your frame and trailing arms. If if you're gonna use newer Camaro rims (and they are nice, using modern, taller-wider tire sizes) I'd suggest using a wider rear axle out of the 4X4 S10/Blazer (4" wider) which would probably give you a better shot at OEM disk brakes anyway. In the front, you're gonna cut off those steering arms anyway and put in some sort of shortening solution. The "other" solution is to use some of the biggest spacers ever created, and I can't see doing that in a high performance car (or for that matter, any car or truck). So therefore, I'd stay 92 and older.
