Dump the pedals. They're just added complexity. Optimize the hand controls to suit yourself.
You could probably dispense with the steering wheel and run handlebars; clutch, throttle, and brakes (linked front and back) all right there. The car is light and you can run power steering if the effort is higher than you like.
The main downside would be that the steering ratio would have to be high for much lock when parking, but most modern production cars are in the go-kart category anyway, so you might not notice. Also you can play with a variable-ratio rack or linkage.
Or, if you're used to a particular system, just stay with what you know, assuming it's not horrible. I've seen some (1970s, come to think of it) Rube Goldberg collections of rods and levers that looked downright unsafe.
I got my motorcycle license when I was 13, and put 30,000 miles on before I got my learner's permit for a car at 16. You get used to controls working in a certain way. I'll never forget the expression on my Dad's face when I rolled up to that stop sign, pushed down on the clutch with my left foot, and squeezed the steering wheel with my right hand... fortunately there wasn't any cross traffic that time. Also, three years and 30,000 miles of working a hand clutch didn't help a bit when driving a pickup truck with a stick shift. Stupid leg, why do you keep stalling the engine?!
